My go-to, healthy gut-healing vegetable soup. I love adding protein and avocado on top or just sipping it out of a mug with a little sea salt sprinkled on top.

Juice of 1 lemon
1tbspnutritional yeast

Instructions
Heat a large pot over medium heat. Add olive oil, onions, garlic, and salt, and cook for 3-5 minutes.
Chop up the broccoli into small florets and then cut the zucchini in quarter pieces.
Add the broth, broccoli, and zucchini to the pot. Bring to a boil then reduce heat to medium and cook, covered for 25 minutes. Stir occasionally to make sure the vegetables are fully cooked.
When the vegetables are tender, remove the lid from the pot and stir in the coconut milk, nutritional yeast, and lemon. Cook for 5 more minutes.
Add ingredients to the blender and blend until smooth.
Serve in bowls topped with avocado or protein of your choice. *You can also just pour it into a mug and sprinkle some salt on it and sip it.
