No-bake Chocolate Protein Cookies

These chocolate protein cookies are a serious treat for the chocolate lover! Filled with our TDW protein powder, these cookies are perfect for an afternoon pick-me-up or a quick bite before a workout. Oh and did we mention, they are a NO-BAKE recipe!

Ingredients
  

  • 3 cups quick cooking rolled oats gluten-free
  • 3 tbsp TDW Chocolate Protein Powder
  • 1/3 cup coconut oil
  • 1/2 cup almond milk
  • 4 tbsp unsweetened-organic cocoa powder
  • 2 tbsp organic coconut sugar
  • 1/2 cup crunchy almond butter
  • 1 tsp vanilla

Instructions
 

  • Place the oats and protein powder in a large mixing bowl. Stir to combine.
  • In a medium sized sauce pan, combine the coconut oil, almond milk, cocoa powder and coconut sugar. Turn the heat to medium. Gently whisk ingredients together as the coconut oil and sugar melt. This will happen quickly. As soon as mixture begins to bubble, turn the heat down to simmer and add in the nut butter and vanilla. Whisk quickly until smooth and blended.
  • Carefully pour the hot mixture over the oats. Using a rubber spatula, thoroughly mix all of the ingredients together until a thick batter is formed.
  • Using an ice cream scoop, scoop out the mixture and place it into your hands. It helps if you put a little water on your hands at this point. Roll the dough in your hands like you're making meatballs. Place the ball on a parchment-lined baking sheet and using your palm, gently press down on the cookie. Repeat with the rest of the batter. We got 9 cookies out of this recipe. Feel free to make the cookies as small or large as you want!
  • Place the baking sheet into the refrigerator, and allow the cookies to become firm and set for at least an hour. Store cookies in an airtight container. Enjoy!
