Mediterranean Crunch Salad

This Mediterranean crunch salad is a nutrient packed dish! Filled with an abundant of heart healthy nutrients including potassium, fiber, folate, calcium as well as a vitamin C and K. Add your favorite protein like grilled chicken or fish. Your body will thank you!

Ingredients
  

Salad

  • 1 cup cherry tomatoes cut in halves
  • 1 can chickpeas rinsed-drained and dried
  • 1/4 cup red onion diced
  • 1 red bell pepper diced
  • 1 seedless cucumber diced
  • 1 tb fresh mint chopped
  • 1 tb fresh parsley chopped
  • 1 bunch lactino kale stem removed, leaves chopped
  • 1 tb olive oil (I like Kasandrinos)
  • sea salt

Dressing

  • 3/4 cup creamy tahini
  • 2 tb lemon juice
  • 1 clove garlic finely diced
  • 2 tb olive oil (I like Kasandrinos)
  • 2 tsp manuka honey or maple syrup
  • 3/4 cup water
  • sea salt

Instructions
 

  • Chop all of the ingredients and place in a large mixing bowl.
  • Toss the salad with 1 tablespoon of good olive oil and a pinch of sea salt. This will help soften the kale.
  • In a separate mixing bowl, whisk everything for the dressing together except the water and salt. The dressing will be thick at this point.
  • Start to gradually drizzle in the water and whisk until smooth and creamy. Taste for seasoning and add a pinch of sea salt.
  • Drizzle desired about of dressing over your salad portion. Enjoy!
