Mediterranean Crunch Salad
This Mediterranean crunch salad is a nutrient packed dish! Filled with an abundant of heart healthy nutrients including potassium, fiber, folate, calcium as well as a vitamin C and K. Add your favorite protein like grilled chicken or fish. Your body will thank you!

Salad
- 1 cup cherry tomatoes cut in halves
- 1 can chickpeas rinsed-drained and dried
- 1/4 cup red onion diced
- 1 red bell pepper diced
- 1 seedless cucumber diced
- 1 tb fresh mint chopped
- 1 tb fresh parsley chopped
- 1 bunch lactino kale stem removed, leaves chopped
- 1 tb olive oil (I like Kasandrinos)
- sea salt
Dressing
- 3/4 cup creamy tahini
- 2 tb lemon juice
- 1 clove garlic finely diced
- 2 tb olive oil (I like Kasandrinos)
- 2 tsp manuka honey or maple syrup
- 3/4 cup water
- sea salt
Chop all of the ingredients and place in a large mixing bowl.
Toss the salad with 1 tablespoon of good olive oil and a pinch of sea salt. This will help soften the kale.
In a separate mixing bowl, whisk everything for the dressing together except the water and salt. The dressing will be thick at this point.
Start to gradually drizzle in the water and whisk until smooth and creamy. Taste for seasoning and add a pinch of sea salt.
Drizzle desired about of dressing over your salad portion. Enjoy!
