This juicy BBQ baked chicken is so easy to prepare and with a few pantry ingredients, it comes together in just 30 minutes. To compete this meal, serve with a side of fresh veggies and our gluten free cornbread.
1 cupof your favorite BBQ sauce (see note for our suggestion) plus more for dipping
Instructions
Preheat your oven to 425 degrees. Line a baking sheet with parchment paper or foil and lightly spray with oil to keep the chicken from sticking.
Combine all of the spices in a small bowl.
To help your chicken cook quickly and evenly, we like to pound out our chicken breasts to the same thickness, about 3/4 of an inch thick. To do this, place the chicken breasts in a ziplock bag or in between 2 pieces of plastic wrap. Using a mallet or rolling pin, pound out your chicken.
Place the chicken in a large mixing bowl. Drizzle with 2 tablespoons of avocado oil and sprinkle the spice mixture all over the chicken. Turn the chicken around in the bowl to evenly coat. Next, add 1/2 cup of the BBQ sauce and toss the chicken one more time. Lay the chicken on the greased baking sheet.
Place the chicken in the oven on a middle rack and bake for 12 minutes at 425. Remove the chicken from the oven and spread on the remaining 1/2 cup of the BBQ sauce. Turn the oven down to 375 degrees and return the chicken to the oven to finish cooking, 10 more minutes.
Turn the oven to broil and cook for another 3 minutes to let the sauce caramelize on top. Make sure to stay close and watch your chicken so it doesn't burn.
Remove the chicken from the oven and let rest for 5 minutes before slicing and serving. Enjoy!
