Baked BBQ Chicken ★★★★★

This juicy BBQ baked chicken is so easy to prepare and with a few pantry ingredients, it comes together in just 30 minutes. To compete this meal, serve with a side of fresh veggies and our gluten free cornbread.

Ingredients
  

  • 4 boneless skinless chicken breasts halves
  • 3 tbsp avocado oil
  • 1.5 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp onion powder
  • fresh cracked pepper
  • 1 cup of your favorite BBQ sauce (see note for our suggestion) plus more for dipping

Instructions
 

  • Preheat your oven to 425 degrees. Line a baking sheet with parchment paper or foil and lightly spray with oil to keep the chicken from sticking. 
  • Combine all of the spices in a small bowl. 
  • To help your chicken cook quickly and evenly, we like to pound out our chicken breasts to the same thickness, about 3/4 of an inch thick. To do this, place the chicken breasts in a ziplock bag or in between 2 pieces of plastic wrap. Using a mallet or rolling pin, pound out your chicken.
  •  Place the chicken in a large mixing bowl. Drizzle with 2 tablespoons of avocado oil and sprinkle the spice mixture all over the chicken. Turn the chicken around in the bowl to evenly coat. Next, add 1/2 cup of the BBQ sauce and toss the chicken one more time. Lay the chicken on the greased baking sheet.
  • Place the chicken in the oven on a middle rack and bake for 12 minutes at 425. Remove the chicken from the oven and spread on the remaining 1/2 cup of the BBQ sauce. Turn the oven down to 375 degrees and return the chicken to the oven to finish cooking, 10 more minutes.
  • Turn the oven to broil and cook for another 3 minutes to let the sauce caramelize on top. Make sure to stay close and watch your chicken so it doesn't burn. 
  • Remove the chicken from the oven and let rest for 5 minutes before slicing and serving. Enjoy!
