We're adding another treat to your weekly meal prep line up. These chewy protein cookies can be a great accompaniment to your morning cup of Joe or packed in your weekday lunch. Packed with protein, healthy fats, and fiber, these cookies will leave you satisfied and smiling.
1scoopTDW vanilla protein powder (chocolate would work great too)
1/4tspcinnamon
1/2tspaluminum free baking powder
1/2tspsalt
1/4cuppepitas
Wet Ingredients
1banana ripe
3tbsphoney
1egg
3/4cupnut butter of choice (see note)
Instructions
Pre heat oven to 350 degrees. Line a baking sheet with parchment paper.
In a large mixing bowl, combine all of the dry ingredients and whisk together to combine. In a separate bowl, combine all of the wet ingredients. Using a spatula, mash the bananas and whisk all of the ingredients until well combined and smooth.
Make a well in the center of the dry ingredients and gently pour in the wet ingredients. Using a wooden spoon or spatula, stir together until combined
Place the cookie mixture in the refrigerator to set for 15 minutes
Scoop about 1/4 cup of the mixture into the parchment. Using the back of the scoop, gently press down on the cookie because the dough will not spread in the oven. You should get 12 cookies.
Bake for 20 minutes until the cookies are golden brown on the bottom. Let cookies cool on the sheet pan for 10 minutes before moving to a wire rack to continue to cool.
Store Cookies in an airtight container for up to a week. Enjoy!
