Coconut Lime Chicken ★★★★★

Ready for another easy weeknight dinner?! This coconut lime chicken is easy to prepare, full of flavors, and bursting with coconut lime aromas. With just a few fresh ingredients and pantry staples, this dish comes together in under 30 minutes.

Ingredients
  

For the Chicken:

  • 2 boneless skinless chicken breasts sliced horizontally to make 4 thin chicken cutlets. Or 4 thin chicken cutlets from your butcher.
  • 2 tsp gluten free flour
  • 2 tsp salt
  • 2 tsp pepper
  • 2 tsp garlic powder

Sauce:

  • 2 tbsp avocado oil
  • 1/2 large shallot finely chopped
  • 2 cloves garlic finely chopped
  • 8 oz organic coconut milk from 1 can, well shaken
  • 1/2 cup chicken bone broth
  • zest and juice from 1 lime
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1 bunch cilantro finely chopped, about 1/4 cup

Instructions
 

  • Gather, chop and pre measure all of your ingredients for your chicken and sauce

Chicken:

  •  Lay each of the 4 chicken cutlets out on a parchment sheet or baking pan. Season each side of the chicken breasts with a sprinkle of salt, garlic powder and some fresh cracked pepper. Then sprinkle over 1/2 teaspoon of gluten free flour on each cutlet. Rub around and flip over. Season the other side of the chicken cutlet.
  • Pre heat a large non stick sauté pan over medium hight heat. Once hot, add 2 tablespoon of avocado oil and swirl around the pan. Add the chicken cutlets to the pan and cook for 3 minutes on each side. Remove the chicken and set aside on a plate.

Sauce:

  • If your pan needs more oil, add 1 additional tablespoon of avocado oil. Add in the shallots and garlic. Stir around for just a few seconds with a wooden spoon to coat in the oil while also scrapping up any brown bits from the pan. 
  • Pour in the coconut milk, chicken broth, lime juice and zest. Bring to a light boil then reduce the heat to simmer. Add in the salt and garlic powder. Add the chicken cutlets to the sauce and continue to cook the chicken in the simmering sauce for about 8 more minutes.
  • Serve your chicken over organic white rice or cauliflower rice. The sauce is so delicious, you'll want a good side to soak up all of the flavors. Garnish with fresh cilantro and a wedge of lime. Add a few sprinkles of red pepper flakes if you want a little heat. Enjoy!
