Collard Greens

Collard greens are an easy one-pot dish that you cook slow and low to cook down the tough bitter greens. They are super nutrient-dense and an excellent way to get a good serving of calcium, protein, and iron.

Ingredients
  

  • 1 sweet onion
  • 3 cloves garlic
  • 4 cups organic chicken broth
  • 1 1-lb bag collard greens washed, trimmed, and chopped
  • 3 tbsp apple cider vinegar
  • 1 tsp sea salt
  • 12 oz gluten-free ham diced
  • 1 tsp red pepper flakes

Instructions
 

  • In a large Dutch oven pot, add all of the ingredients except for the apple cider vinegar. As the mixture heats up, stir around the greens and they will begin to wilt.
  • Cook the mixture over medium heat for about 1 hour.
  • After 1 hour, stir in the apple cider vinegar and continue to cook for another hour to an hour and a half, until the greens are tender.
  • Taste the greens for salt and add red pepper flakes for a kick of spice. Enjoy!

Notes

*Instead of a ham hock, we love using diced ham to make this dish a quick and easy cook. We used Frick's gluten free ham from our local market.
