Date night Lemon Chicken and Asparagus ★★★★★
We've created another no fuss, wildly flavorful chicken dish!! With minimal ingredients and easy instructions, this dish is the perfect recipe for relaxing date night at home. This recipe also doubles and triples well if you're wanting to feed a crowd.

- 4 bone-in, skin on chicken thighs
- 2 tbsp extra virgin olive oil
- 2 tbsp dijon mustard
- 1 lemon juice and zest
- 1 tbsp italian seasoning
- 1/2 tsp kosher or sea salt
- 1/2 tsp garlic powder
- fresh cracked pepper to tase
- 1 bunch organic asparagus tender top half only
- fresh parsley leaves optional to garnish
With a paper towel, pat dry the chicken thighs. Place chicken thighs in a 8x8 glass or porcelain baking dish. In a small bowl stir together olive oil, dijon, lemon juice and zest, Italian seasoning, salt and fresh cracked pepper. Set 1 tablespoon aside for the asparagus.
Rub the marinade all over the chicken things making sure you end with the skin side facing up. Marinate the chicken for 1 hour and set aside while your prep your asparagus and your oven preheats.
Pre heat your oven to 375 degrees. Prepare your asparagus by removing the woody ends. You can do this by bending the asparagus until it naturally breaks at the tender part. Toss the asparagus with the reserved tablespoon of marinade. Lay asparagus on a separate baking sheet pan.
Bake your chicken for 25 minutes. After 25 minutes, add the asparagus to the oven and continue to cook for about 25 minutes.
Garnish with fresh parsley and a squeeze of lemon. Enjoy!!
