Detox Soup

Is there anything better than a good cup of soup? What about a soup that is loaded with gut-healthy benefits and vitamins? This soup is a prebiotic jackpot! Leeks and cauliflower are powerful prebiotics loaded with fiber to help keep things healthy and aid with digesting other foods in your body. We love to make a batch of this soup and sip on it all week during the winter months.

Ingredients
  

  • 3 leeks white parts only, cleaned and diced
  • 1 large head of cauliflower broken into florets
  • 4 garlic cloves
  • 3 celery sticks
  • 2 bay leaves
  • 1 tsp TDW mineral salt or quality kosher salt (TDW mineral salt HERE)
  • 8 cups vegetable broth (homemade preferred, but anything low-sodium + organic works great!)

  • Add leeks, cauliflower, garlic cloves, celery, and bay leaves to a large pot. Cover with the 8 cups of vegetable broth. Sprinkle over salt and stir everything together.
  • Turn on heat to high and bring to a boil. Reduce to a simmer and cook for about 30 minutes until the vegetables are fork-tender.
  • Remove the bay leaf from the soup. Using an immersion blender, blend everything together until smooth. A large regular blender will also work great for this recipe. Just be cautious and work in batches with a hot soup.
  • Serve in a mug or bowl with a sprinkle of chopped chives and a swirl of good olive oil. An extra pinch of our TDW mineral salt is a bonus topping as well! Enjoy!
