Green Goddess Salad

Nothing says spring like a beautiful fresh green salad with a healthy dollop of our favorite dairy-free creamy dressing. We spruced this salad up with some healthy fats from avocado slices and added crunch from bright red radishes. Feel free to swap out some of the herbs if you prefer a different mix.
Servings 1 cup of dressing

Ingredients
  

Green Goddess Dressing:

  • 1 bunch of parsley stems removed
  • 1 bunch of dill stems removed
  • 4 green onions
  • 2 sprigs of tarragon stripped from stem
  • 8 mint leaves
  • 2 garlic cloves
  • 1/4 cup good quality olive oil (We love Kasandrinos!)
  • 2 tbsp lemon juice
  • 1/2 tsp salt (TDW Mineral Salt!)
  • 5 oz container of Culina yogurt plain & simple

Salad:

  • 1 head organic Butter lettuce
  • avocado slices
  • radishes thinly sliced
  • cherry tomatos cut into halves
  • olive oil (We love Kasandrinos!)
  • salt (TDW Mineral Salt!)
  • fresh cracked pepper
  • fresh picked parsley
  • fresh picked dill leaves

Instructions
 

  • For the dressing, combine all of the ingredients except the yogurt in a blender. Start with the blender on low for a minute to get the herbs nicely chopped. Stop the blender and scrape down the sides to make sure all of the herbs are getting mixed in. Next, turn the blender back on to medium/low and let it run for another minute. Finally, turn off the blender and add in the yogurt. Blend until well combined.
  • To assemble the salad, nicely place all of the salad ingredients around in a medium-sized bowl. Finish the salad with a light drizzle of olive oil and season everything with kosher salt and fresh cracked pepper. Add a few dollops of the green goddess dressing around the salad and serve. Enjoy!
