High Protein Turkey Ranch Wraps

Is there anything better than only having to make one meal for the whole household? These Turkey Roll-Ups are a hit with the kids and you can pack them in everyone's lunches! Gluten and dairy free as well as packed with a good protein punch, you'll feel good about feeding these easy lunch prep items to your entire family.

Ingredients
  

  • 4 Siete Almond Flour Tortillas
  • 8 slices of Applegate Organic Smoked Turkey
  • 1 pkg Applegate Organics no sugar, uncured bacon
  • 2 5-oz containers plain Culina yogurt
  • 3 green onions very thinly sliced
  • 1 red bell pepper very small diced
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp dry dill
  • 1/2 tsp dry parsley
  • 1/2 tsp sea salt
  • fresh cracked pepper

Instructions
 

  • Preheat oven to 400 degrees. Line a sheet pan with foil or parchment paper. Lay out the 8 slices of bacon from the package and bake in the oven for about 25 minutes. I wanted my bacon pretty crispy in order to get a good crunch in the wrap. Carefully remove the bacon and lay the slices on a paper towel lined plate to absorb excess grease. Once the bacon has cooled, fine chop the bacon into tiny crumbles that resemble little bacon bits.
  • While the bacon is in the oven make the ranch spread. Combine the yogurt, diced bell peppers, green onions and all of the spices in a bowl and mix. Once your bacon is cooled and chopped, add it to this mixture and stir well. I made this a day in advance and the flavor was amazing. This recipe also makes more than you need. We do this on purpose so we can snack on it all week with veggies or crackers.
  • Carefully heat each of the tortillas in skillet over medium high heat. The package instructs about 10 to 15 seconds per side. Let each tortilla sit for about a minute to take the heat off.
  • Take 2 tablespoon of the ranch mix and spread all over each tortilla. Lay 2 slices of turkey on top of the mixture. Carefully roll up each tortilla. You want these to be snug, but not too tight because the tortillas will tear. Repeat with the other 3 tortillas.
  • Place the wraps on a plate and cover tightly for about 30 minutes so they can firm up. Slice the uneven edges off and save as a snack for your hard work!! Slice the rolls into 4 even circles. Enjoy!
