Homemade Gluten-Free Cornbread
Here is a delicious recipe for homemade gluten-free cornbread! If you are short on time, we recommend the Bob's Red Mill gluten-free cornbread mix.

- 2 eggs
- 1 cup creamed corn
- 1 cup organic sour cream (We love Good Culture brand!)
- 1/2 cup olive oil (We love Kasandrinos!)
- 1 2/3 cup gluten-free fine cornmeal
- 3 tsp baking powder
- 1 1/2 tsp salt
Combine the eggs, creamed corn, sour cream, and olive oil in a mixing bowl and whisk to combine.
In a separate bowl, whisk together the cornmeal, baking powder, and salt.
Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir gently to combine.
Pour batter into a greased 9x9 inch pan. Bake at 375 degrees for 45 minutes.
