Lemon Baked Wild Cod ★★★★★

This baked cod is so easy to prepare and topped with a mouth watering lemon-butter herb sauce! The Cod is packed with heart healthy omega-3's and essential vitamins like B12 and selenium. This dish is a lean and high quality source of protein with a whopping 30 grams of protein per serving.

Ingredients
  

  • 4 6 oz wild cod filets
  • 8 thin slices of lemon
  • 2 tbsp grass fed butter sliced into 4 1/2 tablespoon pieces
  • 4 tsp dijon mustard
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • Fresh cracked pepper
  • 1 1/2 tbsp fresh chopped herbs finely chopped. We used parsley, chives and dill.

Instructions
 

  • Pre heat your oven to 400 degrees. Pat your fresh cod filets dry with a paper towel.
  • Lay 4 slices of lemon down on the bottom of a baking dish. Place each cod filet on top of each lemon slice.3. Season each piece of fish with salt, garlic powder and some fresh cracked pepper.
  • Season each piece of fish with salt, garlic powder and some fresh cracked pepper.
  • Place a teaspoon of the dijon mustard on top of each filet and using a pastry brush or the back of a spoon, gently coat the entire top and sides of the fish. Generously top each of the filets with your fresh chopped herbs.
  • Place your 1/2 tablespoon pieces of butter on the center of each filet and lay a slice of lemon on top of the butter.
  • Bake in the oven for 400 degrees until the fish is flakey and no longer opaque. Enjoy!!

Notes

*The perfect side dish for this delicious flakey white fish is oven roasted baby potatoes or some steamed rice. You'll want something to soak up the herb garlic sauce.
