Mediterranean Power Bowls ★★★★★
These Mediterranean power bowls are ultra delicious and nutritious! This easy one-pan dish comes together in under 30 minutes and is full of flavor to spice up your weeknight dinner. A power bowl is also a great addition to your weekly meal prep round up.

- 1 tbsp avocado oil
- 1 small onion diced
- 1 small zucchini diced
- 1 orange bell pepper diced
- 1 lb ground lamb or grass-fed ground beef
- 3 cloves garlic minced
- 1 cup cherry tomatoes cut in half
- 1 1/2 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1 tsp salt
- Fresh cracked pepper
- 2 tbsp Of fresh chopped herbs such as mint, dill, and parsley
Optional Garnish
- Crumbled feta cheese
- Crispy chickpeas
- Castelvetrano green olives, sliced
- Fresh herbs such as oregano, mint, dill or green onions
Heat a large sauté pan over medium to medium-high heat. Add avocado oil and swirl around pan. When the oil is hot, add your onions, bell peppers and zucchini. Sauté for about 5 minutes until the vegetable start to soften.
Add your ground lamb or beef and break apart with a wooden spoon. Season the meat with 1 teaspoon of salt and some fresh cracked pepper.
When the meat looks about 1/2 way cooked, add in the garlic, cherry tomatoes, cumin, paprika and oregano. Continue to cook until the meat is browned.
Remove the pan from the heat and stir in your fresh herbs of choice. Enjoy!
