Pumpkin Chocolate Chip Protein Bars

Ingredients
  

  • 2 sticks (1 cup) unsalted butter, melted
  • 2 cups Bob’s Red Mill gluten-free flour
  • 1 cup (about 2 scoops) Pumpkin Spice Bone Broth Protein (Shop here!)
  • 1 3/4 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp mineral salt
  • 1 cup pumpkin purée
  • 1 egg
  • 1 tsp water
  • 2 tsp maple syrup
  • 2 cups dark chocolate chips

Instructions
 

  • Preheat oven to 350°F. Line an 8x8-inch pan with parchment paper.
  • Mix dry ingredients: flour, protein, coconut sugar, baking powder, salt.
  • Add wet ingredients: pumpkin, egg, water, maple syrup. Stir until combined.
  • Stir in melted butter until batter is smooth.
  • Fold in chocolate chips.
  • Bake 35–40 minutes, until a toothpick comes out with a few moist crumbs.
  • Cool fully before slicing into bars. Enjoy!
