Refreshing Watermelon Salad

A refreshing salad perfect for the summer!

Ingredients
  

  • 3 cups large diced seedless watermelon
  • 1 cup organic washed blueberries
  • 2 small chopped persian cucumbers
  • 1/2 cup chopped roasted pistaccios
  • 5 basil leaves roughly torn
  • 5 mint leaves roughly torn
  • 1 tbsp olive oil
  • squeeze the juice of half a lime
  • sprinkle a dash of sea salt

Instructions
 

  • Combine watermelon, cucumbers, blueberries, pistaccios, basil and mint leaves.
  • Drizzle the olive oil over the salad and squeeze of lime.
  • Gently toss together.
  • Finish with a sprinkle of sea salt. Enjoy!
