Refreshing Watermelon Salad
A refreshing salad perfect for the summer!
- 3 cups large diced seedless watermelon
- 1 cup organic washed blueberries
- 2 small chopped persian cucumbers
- 1/2 cup chopped roasted pistaccios
- 5 basil leaves roughly torn
- 5 mint leaves roughly torn
- 1 tbsp olive oil
- squeeze the juice of half a lime
- sprinkle a dash of sea salt
Combine watermelon, cucumbers, blueberries, pistaccios, basil and mint leaves.
Drizzle the olive oil over the salad and squeeze of lime.
Gently toss together.
Finish with a sprinkle of sea salt. Enjoy!
