Simple Arugula Salad

This is one of those salads that everyone asks for — bright, fresh, and so easy to throw together anywhere you go. Perfect as a side or topped with protein for a full meal.

Ingredients
  

  • 1 5 oz box arugula
  • 1/2 lemon juiced
  • 1-2 tsp rice vinegar or apple cider vinegar
  • 2 tbsp extra virgin olive oil
  • 1 small avocado sliced or cubed
  • 2 tbsp pine nuts toasted if desired
  • shaved parmesan cheese to taste
  • Mineral salt to taste

Instructions
 

  • Add arugula to a large mixing bowl.
  • Drizzle with olive oil, lemon juice, and vinegar. Toss lightly to coat.
  • Add sliced avocado and pine nuts. Sprinkle with mineral salt to taste.
  • Finish with shaved Parmesan. Toss gently again and serve immediately.

Notes

  • Toasting the pine nuts brings out a rich, nutty flavor.
  • If prepping ahead, wait to add the avocado and Parmesan until just before serving.
  • You can add grilled chicken, salmon, or chickpeas for a heartier meal.
