Simple Arugula Salad
This is one of those salads that everyone asks for — bright, fresh, and so easy to throw together anywhere you go. Perfect as a side or topped with protein for a full meal.

- 1 5 oz box arugula
- 1/2 lemon juiced
- 1-2 tsp rice vinegar or apple cider vinegar
- 2 tbsp extra virgin olive oil
- 1 small avocado sliced or cubed
- 2 tbsp pine nuts toasted if desired
- shaved parmesan cheese to taste
- Mineral salt to taste
Add arugula to a large mixing bowl.
Drizzle with olive oil, lemon juice, and vinegar. Toss lightly to coat.
Add sliced avocado and pine nuts. Sprinkle with mineral salt to taste.
Finish with shaved Parmesan. Toss gently again and serve immediately.
- Toasting the pine nuts brings out a rich, nutty flavor.
- If prepping ahead, wait to add the avocado and Parmesan until just before serving.
- You can add grilled chicken, salmon, or chickpeas for a heartier meal.
