Southwest Beef and Sweet Potato Hash

This grass-fed beef and sweet potato hash is a delicious and easy 30-minute meal that you can serve for brunch or dinner! We use one pan to cook everything in which makes clean-up as easy as the cooking.

Ingredients
  

  • 1 tbsp avocado oil
  • 1/2 cup yellow onion small dice
  • 1 lb grass-fed ground beef
  • 1 tsp Mineral Salt
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 2 cloves garlic chopped
  • 1 large organic sweet potato washed and cut into small squares (no need to peel)
  • 1 14-oz can organic diced tomatoes and green chilis
  • 1/4 cup beef broth

For Serving:

  • Fresh cilantro leaves
  • Siete almond flour tortillas
  • Raw shredded cheddar if not dairy-free

Instructions
 

  • Heat a large sauté pan over medium-high heat. Add in avocado oil. Toss in the onion and beef together and break apart using your cooking spoon. When the beef is almost cooked through, add in the salt, cumin, chili powder, and garlic. Stir around to coat and finishing cooking the ground beef.
  • Once the beef is fully cooked, pour out onto a large plate while carefully leaving a little oil in the pan for the sweet potatoes.
  • Add in the diced sweet potatoes, canned tomatoes and beef broth with a pinch of salt. Stir everything together and let it cook for about 20 minutes on medium-low until the potatoes are tender.
  • Add the ground beef back to the pan and gently combine.
  • Taste the hash and add more seasoning as your taste buds require.
  • Garnish with fresh cilantro leaves. Enjoy!!

For Serving:

  • Enjoy the Hash as is, or serve with a toasted Siete tortilla and fresh avocado slices.
  • If serving for brunch, add a fried egg on top for extra protein.
