Organic Spinach & Chicken Sausage Soup

Soup season is here! This easy soup is packed with so many nutritious veggies and protein! It's the warm superfood hug your body is craving on these cold, fall evenings.

Ingredients
  

  • 1 tbsp extra virgin olive oil (I like Kasandrinos)
  • 1 onion diced
  • 3 carrots peeled and diced
  • 3 celery diced
  • 1 lb organic chicken sausage cut in half lengthwise then into half moons (we used Bilinkski's brand organic cajun style sausage)
  • 2 bay leaves
  • 1 5-oz container organic spinach
  • 1 28-oz can San Marzano broth
  • 1 cup red lentils
  • 6 cups organic chicken broth
  • 2 tsp salt
  • freshly cracked pepper

To Serve

  • red pepper flakes
  • freshly grated parmesan cheese

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the onion, carrot and celery and sauté for about 5 minutes. Next add in the sliced sausage and cook for another 5 minutes. Stir everything around to get the sausage to caramelize.
  • Next, stir in the spinach a little at a time until it wilts down. Add in the tomatoes, lentils, chicken broth, bay leaves, salt and pepper. 3. Bring the soup to a boil. Reduce heat to simmer. Cover and let simmer on low for about 30 minutes.
  • Ladle into soup bowls and enjoy with freshly grated parmesan cheese and crushed red pepper flakes. Enjoy!
