1lborganic chicken sausagecut in half lengthwise then into half moons (we used Bilinkski's brand organic cajun style sausage)
15-oz containerorganic spinach
128-oz canSan Marzano broth
6cupsorganic chicken broth
freshly cracked pepper
red pepper flakes
freshly grated parmesan cheese
In a large pot, heat the olive oil over medium heat. Add the onion, carrot and celery and sauté for about 5 minutes. Next add in the sliced sausage and cook for another 5 minutes. Stir everything around to get the sausage to caramelize.
Next, stir in the spinach a little at a time until it wilts down. Add in the tomatoes, lentils, chicken broth, bay leaves, salt and pepper. 3. Bring the soup to a boil. Reduce heat to simmer. Cover and let simmer on low for about 30 minutes.
Ladle into soup bowls and enjoy with freshly grated parmesan cheese and crushed red pepper flakes. Enjoy!
